Cooking more fish has been on my radar for a long time, and for various reasons It just hasn’t happened. This recipe from the NY Times Cooking was appealing for its speed and simplicity.
This is an easy one pot dinner with chicken, rice, lemon and olives that comes together easily and is mostly hands-off, so you can pour yourself an apéro while it’s in the oven.
This crispy chicken with mustard came about when I was looking for easy meals without a lot of shopping, prep or clean up and I’ve been into breadcrumbs (especially when tossed in butter) lately.
