Pork, eggplant and green beans in red curry sounds pretty good, right? I was lucky to find some lovely little Japanese eggplants.
Now it seems like we’re on a bit of a mussel binge. I had been thinking about how good they were in Thai red curry and wanted to try them.
As much as I’ve written about Omsom, and cooked many delicious meals with their starters, I never tried the Krapow, a Thai “savory chili garlic sauce”.
This shrimp recipe was so good I couldn’t wait for the next day to have the leftovers for lunch. It’s easy, quick and not much clean up. Winner!
