Pork, eggplant and green beans in red curry sounds pretty good, right? I was lucky to find some lovely little Japanese eggplants.
Now it seems like we’re on a bit of a mussel binge. I had been thinking about how good they were in Thai red curry and wanted to try them.
This shrimp recipe was so good I couldn’t wait for the next day to have the leftovers for lunch. It’s easy, quick and not much clean up. Winner!
