Traditional French Vinaigrette Recipe

This traditional French vinaigrette is great on salads, as a sauce for chilled artichokes, or even a marinade for grilling chicken. Add the juice of half a lemon,  a small minced garlic clove, some herbs de Provence, if you’d like. The Accidental Locavore prefers a more acidic vinaigrette, if you don’t add more oil. This is enough dressing for a two-person salad:

Ingredients

  • 1 shallot, finely chopped
  • 2 tablespoons red wine vinegar (use a good quality)
  • 1/4 cup olive oil (use a good quality oil)
  • 1 tablespoon Dijon mustard
  • salt and pepper to taste

Directions

Step 1
Combine all the ingredients in a small jar, cover and shake until well blended. Taste and check for seasonings. Serve and enjoy!
