Traditional French Vinaigrette Recipe

This traditional French vinaigrette is great on salads, as a sauce for chilled artichokes, or even a marinade for grilling chicken. Add the juice of half a lemon, a small minced garlic clove, some herbs de Provence, if you’d like. The Accidental Locavore prefers a more acidic vinaigrette, if you don’t add more oil. This is enough dressing for a two-person salad:
Traditional French Vinaigrette
Ingredients
- 1 shallot, finely chopped
- 2 tablespoons red wine vinegar (use a good quality)
- 1/4 cup olive oil (use a good quality oil)
- 1 tablespoon Dijon mustard
- salt and pepper to taste

| Combine all the ingredients in a small jar, cover and shake until well blended. Taste and check for seasonings. Serve and enjoy! |
